Talented chef Tom Selman effortlessly
makes what he calls "refined comfort food": Formerly Who's the Boss restaurant and before that Iao Café, this popular eatery, located on the main street of Wailuku, is now owned by Chef Tom Selman, well known in culinary circles on Maui. He was formerly the chef du cuisine at David Paul's Lahaina Grill and also was corporate chef for the Sansei/Vino restaurants. Pau hana pupu menu (after-work appetizers) available 3pm-7pm. Chef Selman calls his food "refined comfort food," with signature menu items that include onion rings with house-made smoky ketchup, roasted Chinese chicken salad (with won tons), blackened-chicken-and-shrimp pasta salad (with a creamy avocado ranch dressing), slow-cooked baby back ribs (with Poha-honey-mustard glaze), and Mother's Roast Beef Sandwich (served open-faced on a French roll). The chef will happily customize any menu item for people who prefer low-calorie, low-fat, or low-carbohydrate options. Daily specials range from grilled steak to roasted eggplant terrine. local foodies, the totally unpretentious fare here is made with Maui-grown
ingredients and paired with unaffected environs (the key to the bathroom out
back is tethered to a spatula). The lunch menu, served Monday through Friday, 11
a.m.–3 p.m., includes a Durham Ranch beef burger served on a Maui onion bun and
a Caesar salad made with a full head of baby romaine lettuce from Kula. Ahi
Cones—fresh tuna tartare with greens in an Asiago cheese cone—and macadamia
nut–smoked beef brisket are favorites on the tapas menu that's available from 3
p.m.–7 p.m. There's also a small selection of wine, beer, and a full bar (but
